and I made some mighty fine Ho Cakes myself this past weekend. We smoked chicken breasts over cherry wood; we used the wood from the cherry tree we had taken down a couple weeks back. Gregg said it was the best smoked chicken we have done in a while, it was perfectly smoked (I think the cherry wood imparts a subtle yet sweet flavor, more so that oak or hickory) and it was still very moist after being on the smoker for 3 ½ hours. We served our Ho Cakes with smoked chicken and a medly of peppers from our garden that were marinated in vinegar, oil, sugar, celery seed and Thai sweet chili sauce . Sunday we were outside and Gregg noticed that one of our daylilies had a flower. It is probably the last one of the season. (FYI, they call them daylilies because when they produce a flower, it lasts only for one day) Hard to believe that Fall is around the corner.

We will be getting ready to go camping at Cataloochie this weekend. So between SaNdMaN and I, we should have plenty of MOFRO echoing thru the valley!! Hope to get some close up shots of the elk. I hope y’all have a wonderful week!!

Those Smoked Chicken Ho Cakes look delish Sunshine! I will be stealing that idea from you. Where can I get a good Ho Cake recipe? Paula Deen? Or is yours better?
2 cups yellow corn meal 1 cup all purpose flour 4 teaspoons sugar 2 teaspoons baking powder 1 1/2 teaspoons kosher salt 2 cups H2O 1/2 stick melted butter (extra butter for frying in, or you may spray the pan with pam or use olive/veggie oil - your call)
mix 1st 5 ingredients, then add in the H2O and melted butter - whisk away. Heat griddle or pan (I use cast iron) when pan is hot (medium high) add your choice of butter, pam, or olive/veggie oil to the pan. Add Ho Cake mixture as you would a panacake, cook roughly 2 minutes each side; make sure they are a purty golden brownish, nice presentation!!
Now twists on this "basic" recipe - you can add to the batter after it is whisked is: fresh corn, scallions, bacon, parm cheese and garlic for an Italian twist, or ramps (my personal favorite), just use your imagination. The batter will stay good for a day or so. We are gonna make these when we go camping this weekend, great for breakfast, lunch or dinner.
