Thinking last night, hhmmmm, what should I make for our evening vittles. I got to thinking, what do we have on hand. More thinking ensued. I found some ramp bulbs in the fridge. I made a trip down to our ramp patch and saw that some of the leafs were just starting to turn yellow, so I clipped a mess of leafs. I had to accept that Ramp Season is coming to an end. Sad, yes I know, but it happens every year. I had some buttermilk and corn meal and well, I made my version of Ho Cakes with Ramps. They were phenomenal…..crispy on the outside and moist and tender on the inside. The pat of butter was the perfect accompaniment to these wonderful gifts from the corn gods. They were so good, I couldn't wait to dip my plate!! I then began to question myself as to why why why did I wait til the end of Ramp Season to enjoy these delectable Ho Cakes. I am just thankful that I enjoyed as many meals with Ramps as I did. Now I have to think of what other version of Ho Cakes I can come up with. Stay Tuned Folks……
